Steps:
1. Remove the Head and Tentacles

  • Lay the fresh squid on a clean cutting board.
  • Hold the body (the tube) of the squid in one hand and the head in the other.
  • Gently twist and pull the head away from the body. Most of the innards will come out with the head.
  • Remove the beak (a hard, plastic-like piece) from the tentacles if it's still attached.

2. Separate the Tentacles

  • You'll have a mass of tentacles and the body (tube) of the squid.
  • To separate the tentacles, cut just below the eyes, separating the tentacles from the head.

3. Clean the Tube

  • Hold the tube of the squid under cold running water and rinse the inside and outside.
  • Peel off the skin from the tube. It should come off easily.
  • Remove any remaining innards or cartilage that may be inside the tube.
  • Cut the tube into rings or strips as desired.

4. Clean the Tentacles

  • Inspect the tentacles for any remaining bits of beak or innards. Remove them if necessary.
  • Rinse the tentacles thoroughly under cold water.

5. Pat Dry
Use paper towels to pat the squid dry. This step is important, especially if you're planning to cook the squid using a method that involves high heat, such as grilling or frying.

Now your fresh squid is cleaned and prepared for cooking. You can use it in a variety of recipes, from classic fried calamari to grilled squid with Mediterranean flavors.
