Easy Recipe to Make Delicious Sardine Fried RIce

Ingredients:

  • 2 cups cooked rice (preferably cold, as it fries better)
  • 1 can of sardines in oil, drained and roughly chopped
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn, etc.), diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it heat up.
  2. Add the chopped onion and minced garlic to the skillet. Stir-fry for about 1-2 minutes until the onion becomes translucent and the garlic is fragrant.
  3. Push the onion and garlic to the side of the skillet and pour the beaten eggs into the cleared space. Scramble the eggs until they are cooked through.
  4. Add the diced mixed vegetables to the skillet. Stir-fry for another 2-3 minutes until the vegetables are tender.
  5. Add the chopped sardines to the skillet. Gently break them apart with a spatula and stir-fry for a minute or two to combine them with the other ingredients.
  6. Add the cold cooked rice to the skillet. Use a spatula to break up any clumps and mix it with the other ingredients.
  7. Pour the soy sauce and oyster sauce (if using) over the rice. Stir-fry the rice for a few minutes until it's heated through and evenly coated with the sauces.
  8. Season the fried rice with salt and pepper to taste. Adjust the seasoning according to your preference.
  9. Once everything is well combined and heated, remove the skillet from the heat.
  10. Serve the sardine fried rice in bowls, garnished with chopped green onions.
