Instructions:

  1. Preheat your oven to 450°F (230°C).
  2. Clean the oyster shells thoroughly and arrange them on a baking sheet filled with crushed ice. This will help stabilize the oysters and prevent them from tipping over during cooking.
  3. In a skillet over medium heat, melt the butter. Add the garlic and sauté for about a minute until fragrant.
  4. Add the chopped spinach, parsley, and chives to the skillet. Cook for a few minutes until the spinach is wilted and the herbs are aromatic.
  5. Stir in the breadcrumbs and grated Parmesan cheese. Cook for another couple of minutes, allowing the mixture to come together.
  6. Pour in the heavy cream and mix everything until well combined. Allow the mixture to simmer for a minute or two to thicken slightly. Season with salt and pepper to taste.
  7. Remove the skillet from the heat.
  8. Place a spoonful of the spinach and breadcrumb mixture on top of each oyster in the shells, covering them evenly.
  9. Transfer the oysters on the baking sheet to the preheated oven. Bake for about 10-12 minutes or until the topping is golden and the oysters are heated through.
  10. Carefully remove the baking sheet from the oven.
  11. Arrange the cooked oysters on a serving platter filled with crushed ice. This will help keep the oysters chilled.
  12. Serve the Oysters Rockefeller immediately as a delicious appetizer or starter.

Remember, this is a basic recipe, and you can always adjust the ingredients and quantities to suit your taste preferences. Oysters Rockefeller is a luxurious and elegant dish that's perfect for special occasions or when you want to impress your guests with a classic seafood delicacy.
