Here's a recipe for clam and corn fritters:


Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/2 cup milk
  • 1 large egg
  • 1 cup fresh or canned clams, drained and chopped
  • 1 cup corn kernels (fresh or frozen)
  • 2 green onions, thinly sliced
  • Vegetable oil, for frying
  • Lemon wedges, for serving
  • Tartar sauce or a dipping sauce of your choice

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, black pepper, and paprika.
  2. In a separate bowl, whisk together the milk and egg until well combined.
  3. Pour the milk and egg mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Add the chopped clams, corn kernels, and sliced green onions to the batter. Gently fold them in until evenly distributed.
  5. In a large skillet or frying pan, heat vegetable oil over medium heat.
  6. Drop spoonfuls of the batter into the hot oil, using about 2 tablespoons of batter for each fritter. Flatten slightly with the back of the spoon.
  7. Cook the fritters for about 2-3 minutes per side or until golden brown. Flip them carefully with a spatula.
  8. Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
  9. Repeat the process with the remaining batter, adding more oil to the pan as needed.
  10. Serve the clam and corn fritters hot with lemon wedges and your choice of dipping sauce, such as tartar sauce or a spicy aioli.
